(Video) 4 Easy Vegan & Vegetarian Picnic Recipes

Hello Beautiful Friends I hope you all are blessed and doing well. I posted this video during Independence weekend. I shared some easy vegan and vegetarian picnic recipes with you guys and had to make sure that it was updated here. This is such a special time in our country celebrating our countries independence and these recipes can be prepared at anytime during the year for any occasion. They are quick and easy to prepare. The ingredients are easy to find and you can even whip these up without breaking a sweat.
Here’s what you’ll need:
*ITALIAN PASTA SALAD
2 cups of cooked pasta (I used radiatore any pasta will do)
1/2 cup of Italian dressing
2 tsp garlic powder
2 tsp onion powder
1 tsp of black pepper
2 tsp Italian herbs
1/2 tsp vegetarian seasoning
pinch of salt
1 cup chopped tomatoes
1-2 cups cooked corn
1 cup of sliced black olives
1 cup chopped avocados (two)
In a large pot bring four cups of water to a boil. Add 2 teaspoons of salt to your water. Add two cups of your pasta of choice and cook until tender but not mushy or falling apart. Roughly twelve minutes depending on your pasta. Drain your pasta and pour the pasta into a large mixing bowl. Add your vegetarian seasoning, chopped tomatoes, corn, sliced olives, avocados, herbs, spices and dressing and mix. Allow to marinate for at least 15-30 minutes.
Enjoy hot or cold!


*SOUTHERN STYLE BAKED BEANS
2 cans of baked beans
1/4 cup chopped onion
1/4 cup chopped bell pepper
1 tsp garlic powder
1/2 tsp black pepper
1/2 tsp onion powder
1/2 cup brown sugar
1 tsp vegetarian seasoning
pinch of salt to taste
3 TB mustard
4 TB ketchup
In a large bowl combine two cans of baked beans (vegetarian/vegan), chopped onion, chopped bell pepper, spices, brown sugar, mustard and ketchup into a bowl. Mix all of the ingredients well. In a baking dish oil your dish and pour your baked beans mixture into the dish. Bake in the oven for 30-40 minutes until slightly golden brown on the top. This is a southern staple and can be found sitting on many tables during the holidays waiting to be devoured. It is usually baked with ground beef or ground turkey but for this vegetarian/vegan dish there is no need to add it to this dish. You’ll be pleasantly surprised how delishous this dish is without it!

STAR SPANGLED COCKTAIL
1/2 cup of wine per glass
1/2 cup sparkling water (I used strawberry flavored)
sliced oranges
sliced strawberries
splash of rum
ice
In a cocktail glass add 1/2 cup of wine per glass. Add 1/2 cup sparking water. Add sliced oranges to the sides of the glass. Add a splash of rum and mix lightly with a spoon. Add ice to chill.
Garnish with sliced strawberries.
*Non alcoholic beverage replace wine with grape juice and do not add rum.

*Deep Fried Oreos
2 cups of pancake batter
1/3 cup vegetable oil
1 pack of Oreo cookies
2 tsp vanilla
Heat the oil in a frying pan on medium to high heat. The oil should be shallow and the cookies should peak slightly out of the oil.
In a large bowl add the pancake batter, oil and vanilla and mix well. Dip the oreo cookies in the batter and allow them to drip. Fry the oreos in the oil until golden brown on both sides.
LET THEM REST ON A PAPER TOWEL TO REDUCE THE OIL.
*DUST WITH POWDERED SUGAR
SERVE WARM

*4TH OF JULY FRIES
Ingredients/utensils
potatoes
number 4 cookie cutter
1 tsp salt
This is by far the easiest recipe ever! Simply cut your potatoes into rounds and be sure to choose large potatoes for this. Use your cookie cutter to punch in the shape. Salt your water with 1 teaspoon of salt and bowl your potatoes for about 5-7 minutes. They should not be mushy. They should still be slightly under cooked so that they will continue cooking once fried.
Heat the oil in a frying pan on medium to high heat.
Drain your potatoes well and fry your potatoes until golden brown. Drain the excess oil on a paper towel and sprinkle with your seasoning of choice. I sprinkled bit of lemon pepper seasoning on for an extra kick!
