Oh yes I did!  I said it, its the best!  Well the best I’ve had so far and what made it even better is that this sandwich was homemade.  I have been enjoying the ups and downs of adapting to a more plant based diet.  My family has enjoyed the meals I’ve prepared for them so far but, I must digress there have been a few fopaux’s here and there.  For the most part the recipes have been delicious.  For instance we love making our vegan banana pancakes in the morning a healthy delicious and nutritious breakfast.  This sandwich can be lunch or dinner and it is so simple to make.  The spring and summer is the perfect time to make a sandwich.  Simple, quick and your done!  Well heck anytime is a good time for a delicious sandwich right?  I can’t tell you how many times I have to pack a lunch for my children or when the family takes a road trip and we pack lunches.  This is the perfect on the go solution.  This is also perfect for those weekend easy meals that remind us of junk food.  This sandwich is healthy, high in alkaline but you would never know it.  But, rest assured you will appreciate every single bite.  Since there isn’t any meat in this recipe I will show you how I created a replacement and never missed the “real meat” at all.  I used sourdough bread in this recipe which is easy on the tummy since the gluten is nearly destroyed during the fermentation process.  If your gluten intolerant like me this bread may be something you can try.  If your have celiac disease I would say stick to your diet.   I didn’t have any stomach pains after I ate it and my stomach is so sensitive it let’s me know within five to ten minutes if I’ve ticked it off by putting something in there that doesn’t belong.  I love sourdough bread when toasted it’s crunchy on the outside and soft on the inside,  this makes for a lovely canvas for a sandwich.  Here’s what you’ll need:

  • sourdough bread
  • vegan mayo
  • lettuce
  • spinach
  • tomatoes
  • cracked black pepper
  • lemon pepper blend
  • Himalayan sea salt
  • black olives
  • pickles
  • king oyster mushrooms
  • veggie seasoning (mushroom flavor) (this is a vegan/vegetarian seasoning)
  • liquid aminos
  • garlic powder
  • onion powder
  • herbs de provence
  • red onions
  • yellow mustard
  • red balsamic vinaigrette
  • oregano
First you’ll need to thinly slice your king oyster mushrooms, the thinner the better.  King oyster mushrooms will take on any flavoring you cook them in so that make for an amazing meat alternative.  In my cast iron skillet I prepared a shallow water bath for my sliced mushrooms and added my seasonings, about two tablespoons of liquid aminos, two teaspoons of garlic powder, two teaspoons of onion powder, two tablespoons of veggie seasoning (or two taste) and one tablespoon of herbs de provence.  Let the mushroom simmer on low to medium heat until tender.  This may take about fifteen to twenty minutes.  You’ll let the mushrooms soak up all of that delicious flavor while you slice your veggies.  Once your mushrooms are done you can put them aside for your sandwich.

Starting with my delicious bread I added my vegan mayo on each side and added cracked black pepper, oregano and lemon pepper to both sides.  I layered the veggies lettuce, spinach, pickles, onions and sliced black olives so yummy!

I sliced my juicy tomatoes and cracked a bit of Himalayan sea salt on them to wake up the flavor.  Finally it was time for me to place my mouth watering king oyster mushrooms on, that have been simmering in that flavorful broth.

On the other slice of bread I added the yellow mustard and closed that bad boy up! Smoosh!
