(Video Tutorial) Caramel Pumpkin Spice Chex Snack Mix

Fall is the perfect time to create snack food.  Sunday night games and sweet treats will surely help to keep your spirits lifted!  We wanted popcorn and candy corn, so why not mix them up in a bowl add some caramel, pecans and Chex and call it a day.  We love snack mixes in different combinations and flavors.  They can be salty and sweet or even savory.  Here’s one you can try during a festive season and this one could be added to your party table or movie night tray. Caramel Pumpkin Spice Chex snack mix will please the crowd and the kiddos.

Here’s what you’ll need:
  • 1/2 cup of Fisher Cinnamon Pecan ice cream toppers (or chopped pecans)
  • 4 cups of popped pop corn about 1/2 cup
  • 4 cups Chex cereal
  • 2 cups of brown sugar (packed)
  • 1/2 cup (1stick) of butter
  • 1/2 cup light corn syrup
  • 2 1/2 teaspoons of vanilla extract
  • 2 teaspoons of hazelnut extract
  • 1/2 teaspoon of salt
  • 2 tablespoons pumpkin spice
  • 1/2 teaspoon of baking soda
  • 2 cups of candy corn
Instructions:
1.  Combine popped popcorn and Chex mix in a large bowl and set aside
2.  In a medium saucepan combine brown sugar, butter and corn syrup
3.  Bring to a boil over medium heat until the stirring until your butter is melted
4.  Cook mixture for about 4-5 minutes without stirring
5.  Remove from heat and add vanilla, hazelnut, salt, pumpkin spice and  baking soda stir to combine
6.  Pour mixture over the popcorn and Chex mix stir to combine
7.  Place your mix on a greased cookie sheet and bake for 1 hour stirring occasionally
8.  Take your mix out of the oven, allow to cool for 2 minutes
9.  Add your candy corn 
10.  Let your mix cool down to harden
11.  Store the snack mix in an airtight container
This is by far one of my easiest recipes, it will take about 30 minutes to prepare and complete form start to finish.  I let our boys (The Blazen Bros) help out on this one they like mixing the popcorn and Chex mix.  They added the candy corn and even went a little overboard!  If you would like to take a sneak peek at how we prepared this treat click the video tutorial.  Don’t forget to like comment and subscribe so you won’t miss out on any new videos.

After the mixture has boiled and you’ve added the flavoring to it, pour the mix out onto a well greased cookie sheet and stir a bit.  Work quickly, the caramel cools very fast and you’ll be left with a big caramel rock if you don’t mix it before it cools.  Place the mix into the oven on 350 degrees for 45 minutes.  When it’s ready take it out and allow it to cool down for about 2 minutes.  It won’t take long, trust me.   Now, you can toss in your candy corn or what ever you like! I grabbed a Ziplock sandwich bag and took some of this sweet treat to work.  Yum!
