Beautiful Rainbow Pancakes

Rainbow Pancakes!  If you want to start your morning off beautiful and bright, start with these!  Seriously you guys you can make these in any color combination for breakfast, brunch or let the kids have a go at it.  This is a must add to your recipe box.  Trust me, I had no complaints from the fam, they were absolutely ready to help and so excited to taste them.  Now, let’s get started shall we?

Here’s what you’ll need:
2 tablespoon granulated sugar
2 cups all purpose flour (I used Gluten free all purpose flour)
2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 1/2 cups of buttermilk
1 tablespoon of vanilla extract (Gluten free if needed)
2 large eggs
Cooking spray (I used it but it’s not necessary)

So, if you followed the pics above it’s just that easy.  Combine your dry ingredients, combine your wet ingredients, then combine them both.  In separate bowls add your batter as equally as you can and add your food coloring.

Preheat your griddle to 350 degrees.  Add butter and cooking spray to your griddle.  Pour your batter onto your preheated griddle and cook until slightly brown edges appear and bubbles have risen to the top of the pancake.  Okay, now it’s time to flip and they should look something like this. After your pancakes have cooked evenly on both sides take them off and stack them beautifully! (smiley face)Beautiful-Rainbow-pancakes-ready-to-eat
